Feta and Strawberry Salad Jar

As well as tasting delightful, this salad looks stunning served in a jar and has that added twist of strawberries!

Ingredients

Serves 4DSC_0134 (533x800)

  • ½ red onion, finely chopped
  • 500g Good Natured strawberries, hulled and chopped
  • 4 tbsp balsamic vinegar
  • Zest and juice of ½ orange
  • 2 x 400g feta cheese, cubed
  • 4 tbsp freshly chopped mint
  • 4 tbsp freshly chopped coriander
  • 1 tbsp ground pink peppercorns
  • 4 tbsp extra virgin olive oil
  • 2 x 85g bags of watercress
  • 1 cucumber, chopped into cubes
  • 150g pitted black olives, halved
  • Ground black pepper

You will also need:

  • 4 clean large jam or pickle jars

Method

  1. Place the onion in a bowl of cold water for 10 minutes.  Meanwhile, in a food processor or with a hand blender in a bowl, blend one-third of the strawberries into a rough purée, then season with black pepper.  Add the balsamic vinegar and the orange juice.
  2. Transfer the mixture to a small saucepan and bring to the boil.  Hold on a rolling boil for 2 minutes until the mixture becomes shiny, then pour into a small bowl and set aside to cool.
  3. Drain the onion, then add to a clean bowl, along with the feta cubes, mint, coriander and oil.  Season with the pink peppercorns and orange zest and combine, mixing in the oil.
  4. Divide the watercress between the jars, and follow with equal layers of the cucumber, half the remaining strawberries, the olives and the feta mixture, finishing with the remaining strawberries.  Divide the balsamic mixture between them and screw the lids on.  Chill until needed and eat as soon as possible.

They are just perfect for that family and friends picnic!
